Polish Tradition – Boar

Boar dishes are a controversial topic strongly related to the traditional cuisine of Pomorskie and Poland. Boar remains an undiscovered type of meat, mostly because of its limited availability in stores, even though its taste will satisfy even the most discerning foodies. Today, together with Bowke Restaurant, we would like to explore this meat, bacon in particular. I hope that our dishes will not only encourage you to try boar, but also, when it finally appears in stores, to cook something with it. Let’s visit Bowke Restaurant near the Motława River to see what Marcin Faliszek has prepared for us.

Begin with pickling the bacon in 10% brine with bay leaves, allspice, and garlic. Put it aside for 24 hours. Next, rinse the meat carefully and stew it with root vegetables, such as carrots, celery, and parsley. Divide it into portions. Before serving, fry the bacon on medium heat. Serve it with roasted parsley, potato puree, carrot emulsion, and demi-glace sauce on the side. Now let’s make the sauce. Roast boar bones with vegetables. Pour water and wine over it and reduce volume to ¼. Before serving, thicken the sauce with cool butter. In the meantime, make potato puree, roast parsley in a covered dish with caraway, butter, salt, and pepper. Cook thin carrot slices in water until overcooked. Add cold butter, 30% cream, and blend it. Next, add xanthan gum. Fry the bacon and plate the dish.

‘To prepare boar properly, you need a lot of patience,’ says Marcin Faliszek. ‘The meat needs long cooking so that it’s not tough. The main thing is pickling, then long cooking or roasting.’

Begin with pickling the meat in sugar for a day. Then, rinse it carefully and pat dry it. Next, pickle it in salt with garlic, juniper, and bay leaves, and put it aside for another 24 hours. After 24 hours, pat dry it with a towel and roast it in an oven. Cool it down and fry again before serving. Serve it with a traditional potato pie with a lot of garlic, mushrooms fried in butter with onions, kale chips, parmesan sauce with cream and a bit of flour.
